        Hi Joan! I would say this serves at least 6 peploe. It was more than enough for my family of 4 and we had leftovers. The pot I used was about 9 wide and 5 deep. Here is also the exact amounts of veggies I used: 5 small-med sized carrots, 1 large sweet potato, 2 medium russet potatoes, 1 large bell pepper, 1 large onion, and 5 preserved lemons (which made it very flavorful if you want something more mild I think 2 to 3 would be enough). I actually used 2 cups of water but only put 1 cup in the recipe because I ended up draining it for something drier. (If you like it more soup like, you could probably use 2 to 3 cups of water).
