Seasoned Olives

Seasoned green olives

Ingredients:

200g of whole green olives

½ cup chopped cilantro

¼ cup lemon juice

6 garlic cloves

½ Tsp. black pepper

½ Tsp. salt

2 Tsp. cumin powder

2 Tsp. cumin seeds

1 cup extra virgin olive oil + 1 extra cup to preserve the olives.

Preparation:

Place the olives in a bowl and grate the garlic cloves over it. Add the lemon juice, the spices and the cilantro. Mix with a spoon until the spices have covered the olives evenly. Then add the olive oil. Serve immediately or place in an airtight container, add enough olive oil to cover the olives and store in a cool place for up to 60 days.

Seasoned kalamata olives

Ingredients:

200g Calamata olives

6 cloves of garlic

½ cup chopped cilantro

¼ cup lemon juice

3 Tsp. paprika

½ Tsp. hot chili

½ Tsp. salt

1 Tsp. cumin

¼ Tsp. black pepper

1 cup extra virgin olive oil + 1 extra cup to preserve the olives.

Preparation:

Place the olives in a bowl, and grate the garlic over it. Add the lemon juice, the spices and the cilantro. Mix with a spoon until the spices are spread evenly over the olives. Add the olive oil. Serve immediately or place in an airtight container, add enough olive oil to cover the olives and store in a cool place for up to 60 days.
