Goat Cheese Rolled in Herbs

Goat cheese rolled in oregano leaves

Ingredients:

200g Goat cheese

2 Tsp. olive oil

1 Garlic clove crushed / 4g

1/2 Tsp. salt– to taste-

20 Whole oregano leaves

 

Preparation:

How to clean the oregano leaves: Place the oregano leaves on a white plate. With the back of your hand push all the leaves to the front of the plate. Using your fingers bring a few leaves at a time towards you, looking through and removing anything undesirable, such as tiny pieces of wood, rocks, leaves or other plants and dust.

How to toast the oregano leaves: Place the leaves on a heavy skillet and toast them on very low heat for 5 minutes. When the smell of oregano starts getting stronger, the leaves are most likely to be ready.

Goat cheese rolls preparation:

In a bowl, combine the goat cheese with the crushed garlic, olive oil and salt. Whisk everything together. Cover and place in the refrigerator for 1 hour.

Place the oregano leaves on a sheet of parchment paper.

Place 1 Tbsp. of the cheese in your hand and roll it between your fingers to form a ball. The cheese would be sticky, that is normal.

Place the cheese rolls in the oregano leaves. Lift the edges of the parchment sheet to roll the cheese ball from side to side until it’s covered with oregano leaves to your satisfaction.

Place the cheese balls on the serving plate. Drizzle with olive oil and serve with warm wholegrain bread, preferably.

Tip: Place a bowl of water on your working surface and use it to wet your fingers before you roll each cheese ball.

Goat Cheese And Cucumber Rolled In Curly Parsley And Basil Leaves

Ingredients:

200g Goat cheese

1/3 Cucumbers / 80g

1 Tsp. salt (to taste)

1 Garlic clove crushed/ 4g

1 Cup of Italian flat leaf parsley chopped/25g

1/4 Cup basil leaves chopped /8g  (optional)

Preparation:

Peel the cucumber, cut off the seeds and grate it on the largest side of your 4 sided cheese grater. Place the grated cucumbers in a strainer and press on it with your hand, to squeeze the excess juice out of the cucumbers.

In a bowl, combine the goat cheese, cucumbers, salt and crushed garlic. Mix everything with a spatula. Place in the refrigerator for 1 hour.

Mix the parsley and basil leaves together and place them on a parchment sheet .Scoop one Tbsp. of cheese, roll it into a ball. Place a cheese ball in the herbs and lift the edges of the parchment sheet to roll the ball from side to side until it’s covered with herbs, to your satisfaction.

Place the cheese balls on a serving plate and serve immediately or keep in the refrigerator for a few hours. Sprinkle with pepper and drizzle with olive oil before serving with warm bread or over a salad.
