Fava Beans & Yellow Squash Salad

Serves 4

Preparation time:

50 minutes for fresh fava beans

10 minutes for canned fava beans.

Ingredients:

2.5 pounds of Fresh fava beans (in the pods), or 1 can ( if you chose to use canned fava beans)

2 Small yellow squash gourds

3 Tbsp. olive oil

2 Tsp. Fresh ground cumin

Salt to taste

Preparation:

Split the pods open by twisting them backward, to extract the beans . Cover the beans with water and boil them for 45 minutes on medium-high heat. Drain the boiling water away. – skip this step if you are using canned beans -

Wash the yellow squash, cut each one in eight lengthwise or as desired. Cut out the seeds .

In a skillet, heat the olive oil on low-medium heat for 1 minute. Add the boiled fava beans, yellow squash, salt and cumin. Cook uncovered for 10 minutes stirring occasionally. Serve warm or cold.

Suggestion:  

After you scoop the fava beans off the skillet, toast two slices of bread in the remaining olive oil for 5 minutes, and serve them with the fava beans.
