½ Cup heavy cream
½ cup flour
1 Teaspoon baking powder
1 Teaspoon vanilla extract
1 Teaspoon cinnamon powder
1 Pinch cloves powder
1 Pinch salt
1 Tablespoons confectioners’ sugar (powder)
3 Large apples
4 Tablespoons honey
¼ Cup pecans chopped coarsely
½ Cup canola oil for frying
Peel, core and slice the apples into 1/4″ slices. Or, slice the apples then use a ¾” round cutter to core each slice.
In a small bowl, whisk the heavy cream with flour and baking powder until the batter is smooth and creamy. Add the egg, vanilla extract, cinnamon, cloves, salt and sugar. Continue to whisk until the batter is smooth and does not have any flour lumps. For better batter, you can combine all the ingredients in a mixer or use a stick mixer like I do.
Preheat the ½ cup of oil in a medium frying pan.
The apple slices are easily broken. Use your fingers – preferably- to dip the slices in the batter, when they are coated from both sides, gently place them in the hot oil.
Fry each slice for less than a minute on each side. The second batch of slices will fry a lot faster than the first one. Make sure you constantly keep an eye on your beignets to turn them over as soon as they look golden from the edges.
Place the fried beignets on a paper towel to absorb the excess of oil.
Transfer the beignets to the serving plate. Drizzle over them with honey and sprinkle with chopped pecans.
Serve immediately, preferably.
