Potatoes, Oregano and Capers

Serves 3 to 4

Cooking time: 30 minutes

Start to finish time: 40 minutes


½ Kg Red potatoes, washed, peeled and quartered

4 tablespoons olive oil

Salt and pepper to taste

2 Tablespoons dried oregano leaves

3 Tablespoons marinated capers, drained.


Preheat the oven to 400 degrees, on bake option.

Place the potatoes in an oven safe dish. Sprinkle with salt, pepper and oregano.  Rub the spices on the potatoes.

Add olive oil and toss the potatoes to coat them with oil.

Place the dish in the oven, on the middle rack, and cook until they look golden. You can use a spatula to flip them over and cook for another 5 to 10 minutes until they are roasted on all sides if you like to.

Take the potatoes out of the oven, add the capers, and toss everything together.

Transfer the potatoes to the serving plate and enjoy alone or as a side dish.
