Lentils and Celery Soup

A simple, hearty soup to warm up your toes on a cold day, and feed your whole family on a small budget!

Cooking time : 7 hours in a slow cooker or 45 minutes on the stove.

Ingredients:

454g Green lentils, washed and drained

5 Tablespoons olive oil

1 Large yellow onion chopped

1 Celery heart chopped

½ Cup parsley chopped coarsely

6 Garlic cloves, crashed and chopped coarsely

3 Teaspoons salt

3 Teaspoons cumin

1 Teaspoon ginger powder

½ Teaspoon crushed red pepper

2 Liters water

Preparation:

Simply combine all the ingredients, cover and cook on medium-high heat. Sit occasionally.

Serve with fresh bread.
