Bread Pudding with Orange Marmalade

Serves 8 to 10

16 Hawaiian rolls

1 Teaspoon butter

4 Whole eggs

4 Egg yolks

1 Cup low fat milk

1 Cup heavy cream

¾ Cup orange juice + 3 tablespoons

3/4 Cup granulated sugar

½ Teaspoon salt

½ Nutmeg grated

Pinch of ground cloves (or cinnamon)

3/4 Cup orange marmalade

Eggnog or vanilla ice cream


Set the oven to preheat to 350 degrees.

Grease an oven safe dish with butter

Cut each Hawaiian roll in half and arrange them in the oven safe dish.

In a large mixing bowl, combine the whole eggs, egg yolks, milk, heavy cream, orange juice, sugar, salt, clove powder and grated nutmeg. Whisk all the ingredients together for 1 – 2 minutes until the batter is foamy.

Pour the batter evenly over the bread rolls. Use a spatula to press down on the rolls until they absorb all the batter.

In a small sauce pan, heat the orange marmalade with 3 tablespoons of orange juice, keep stirring until the marmalade is diluted.

Pour the marmalade over the bread rolls, and place the dish in the oven, on the middle rack. Bake for 30 minutes, or until the bread has absorbed all the liquid. If the rolls are browning too fast, cover the dish with aluminum paper.

Serve warm preferably, with eggnog or vanilla ice cream. Enjoy!
